This 2021, the second vintage of Clandestine Vineyards Tempranillo Rosé follows a style of European, dry textural roses, rather than the plethora of juicy, off-dry styles now all too common in Australia.

This single-vineyard location in Geographe, Western Australia, is well known to Nick and Trudy Stacy (Vintners) for its warmer, maritime micro-climate and soils ideally suited to Tempranillo. Harvested early for rose production, the colour of the final wine is due to the limited skin contact with the juice – in this case, in the picking bins only – no further maceration is required.

The grapes are destemmed, crushed, cold-pressed and the resulting bright pink juice is then stabilised in steel before being racked into older French oak barriques for 100% barrel fermentation; but not malolactic.

When fermented to dry (bone dry) a very light sulphuring ensues followed by a gentle fining – the resulting wine is a glorious light salmon colour with bright fluorescents, a lifted perfume of exotic herbs, spice and mixed cherry – ripe, sour and maraschino. Subtle oak tones give mouthfeel and texture, crisp acidity frames and refresh the palate with length inviting another sip!

Pair with all manner of cuisines, particularly those that carry spice and heat; Asian flavours are favoured – think Thai, Vietnamese or indeed Indian curries.

Vegan too! (the wine, that is!)

This is a rose that takes things up a notch. The free-run juice goes into older French oak before 100% barrel fermentation after which is minimally handles. The result is a light-bodied wine with that typical raspberry, fruity character of the variety but with a texture, slippery palate. Lovely flavour combination that extends to a pleasing finish. Great food wine now.
