Prosecco Rosé 2022
Our first release of Prosecco Rosé is sourced from the Cavedon Vineyard, King Valley, Victoria – grafted to Glera in 2006 from original rootstock planted in the 1970s.
With a north-facing block (elevation 400m) and rich iron red clay soil, Cavedon has achieved the sustainable certificate for their vineyards from 2023, demonstrating their commitment to quality fruit without harmful pesticides and herbicides.
The Glera is harvested and the cold-pressed free-run juice is clarified in stainless steel and then infused with Barbera skins for a long and controlled fermentation to dry
(8.0g/L RS) with no malo or lees stirring. Tank carbonation follows for light fizz and immediately bottled and crown capped with minimal sulphites.
A beautiful, pale pink blush in colour, this sparkling aperitif is light and refreshing with a lively, wild berry lush palate with zippy acidity; perfect with smoked or tartare salmon, charcuterie boards and the all day breakfast!
