Machine harvested, ten days fermentation on skins in open fermenters with hand plunging twice daily, natural cultured yeast, tank pressed, 14 months in seasoned French oak barriques, a small inclusion of Frankland River Cabernet to brighten the palate prior to bottling, vegan fined with minimal sulphites.
Dark purple in colour, intensely lifted aromatics of violets, spice, mocha, dark chocolate with a full spectrum of blue fruits. The palate rolls through, filling the mouth with cherry-cola, and sarsaparilla flavours with soft gentle oak tannins and a juicy, long finish.
Minimal filtration, vegan fined and minimal sulphur on bottling to keep the wine fresh and lively.
Pair with the flavours and cuisine of Latin America, or exciting Asian game dishes such as duck, pork and spice.
